Healthy Avocado Fries

Finding out that I needed to change my every day diet to gluten free has been a challenge, I love anything breaded.  So I have been experimenting a lot lately and came up with this yummy treat that anyone can make.

Make It Gluten Free

You can make this recipe completely gluten free by using gluten free bread toasted and crumbled for your outer coat.  I like a little flavor in my bread crumbs and happened to have some Italian herb bread crumbs from Target Pantry in my pantry so I used those.
Make It Gluten Free With Bob’s Red Mill

Items Needed

2 Large avocados
2 Large eggs
½ – 1 cup Bob’s Red Mill gluten free white rice flour
½ – 1 cup Market Pantry Italian seasoned bread crumbs (you can make or purchase gluten free bread crumbs too)
Garlic salt
Pam cooking spray
Cookie Sheet
Teriyaki, ranch or blue cheese dressing for dipping
Slice The Avocado

Get The Oven Ready

Preheat your oven to 400.  While the oven is preheating, peel and core your avocado, then slice it into strips.

It’s Really Easy, But Kind of Messy

Crack 2 eggs into a container and place the rice flour into another container, and the bread crumbs into a separate container.  Taking one slice of avocado at a time, dip it into the flour then the egg then the breadcrumbs and place them on the greased cookie sheet.

Bake the strips for 10 – 15 minutes. Place on a plate with your choice of dipping sauce and enjoy.
