One of my favorite spicy dishes that I love to make is homemade enchiladas. I learned how to make these at the Fiesta event held here in San Antonio every year. I was invited to cook in a booth at NIOSA (Night in Old San Antonio) and we made these quick and easy enchiladas.

I have changed up the recipe a bit and added my midwestern flair to this spicy yummy meal, and I kept the spice, that’s what makes the dish so good. My spicy enchiladas are quick and easy to make, mainly because I don’t have time to make anything from scratch, but also because I love quick, easy and yummy food.

Items Needed

2 ½ Cups Shredded Chicken (you can buy this at your local grocer already cooked, or you can make it yourself)

2 ½ Cups Shredded Sharp Cheddar Cheese

2 – 10 oz Cans Enchilada Sauce

1 Small Can Sliced Olives

1 – 14 oz Can Black Beans (Optional)

2 Packages of Flour Tortillas, amount depends on how many you want to make (you can use corn too)

Olive Oil

Glass Baking Dish

Sour Cream

Salsa

Jalapeno Slices

Preheat oven to 350 degrees. Spread olive oil to cover bottom of the baking dish. Place your tortillas onto a plate, this makes it easier to create your enchiladas. Place all your fixings into bowls, this also makes the assembly of the enchiladas quick and easy.

Now you get to have fun. Spread a spoonful of enchilada sauce onto a tortilla and then place the chicken in the middle of the tortilla. Then add the rest of the items. I like to do cheese next, the beans, and final the olives. Roll the tortilla like a tube and place it crease side down in the dish.

Fill the dish completely with your enchiladas. Cover the enchiladas with the remaining enchilada sauce and about a half cup of shredded cheese.

Bake the enchiladas for 30 minutes at 350 degrees.  Let them cool for about 5 minutes and dish them onto plates.

For an added touch, I like to put salsa, sour cream and a jalapeno on top of my enchiladas, love that extra touch of spice.
