Summer is almost over, and pumpkin spice is beating down the door. But you can still enjoy the yummy dishes of summer, I mean it is still over 100 degrees out where I live. This is by far the best cucumber salad I have ever made.

Staying Healthy While Staying Home

I decided to start eating healthy, mainly to get rid of the “Covid 20 lbs” I’ve gained doing the stay at home thing. Don’t get me wrong, I am loving staying home and trying new recipes, and my family is loving eating them. But wow, I am definitely the heaviest I have ever been.

This Isn’t Grandma’s Salad

More recipes will be coming soon, but I had to share this amazing cucumber salad with you. My grandma use to make something similar, and OH MY GOSH was it good. But there are no onions in this one. Heck there are no onions ever in my house. I may sneak in a little onion powder here and there, but my husband thinks I am trying to kill him if he even smells onion.

Change It Up And Make It your Own

This is definitely one of those salads you can change up and make it your own. Add the onions, add the garlic, maybe even add some tomatoes. Just have fun with it, I promise, you can’t mess it up.

The Best Cucumber Salad

If you know me, you know I love lime. I pretty much add lime to everything I eat, so why not add it to this. Oh believe me, I did. But you could add orange, or lemon too. The recipe below is for 1 serving, so if you want to make this and take it to a party, read below, I did the math for you, I know, can you believe I did math… Enjoy!!!

Items Needed

  • 1 Seedless cucumber, you can use regular cucumbers, I just happen to enjoy the seedless ones
  • 1/4 Cup sour cream
  • 1 Teaspoon vinager
  • 1/2 Teaspoon sugar (I love the Purecane all natural sugar)
  • 1 Tablespoon fresh dill (but I used some Pampered Chef dill mix I had, yummy)
  • Pinch of salt
  • Pinch of garlic
  • Have fun, add lime or tomato or whatever you want

 

Directions

  1. Peel and slice the cucumber in half, then thinly slice it.
  2. Mix all of the other ingredients in a bowl.
  3. Add the cucumbers.
  4. Eat right away.
  5. Enjoy.

Make It Party Size

Here is the recipe to create this for more then one person, or for a party.
