Easy Sweet Potato Pie Recipe

Creating pies has always been a tradition in my family. We always make the usual’s, apple, cherry, pumpkin, even lemon meringue. But I have never made a sweet potato pie, until now. I didn’t have a recipe to go by, I just made this easy sweet potato pie recipe using ideas from how I like to eat my sweet potatoes.

Boiling The Sweet Potatoes

First off, how do we get the skins off, while also cooking the sweet potatoes? I remember my grandma use to cook her sweet potatoes on the stove top in boiling water. She couldn’t put them in the oven because it was already being used for all the other Thanksgiving goodies.

Using The Right Pot

Quick tip, use a really big pot. This reminds me, I need to buy a much bigger pot. Luckily the pot I had worked, but it did make a bit of a mess when the water started to boil.

Let The Potatoes Cool

I boiled the potatoes until they were soft, about 50 minutes, give or take, depending on the size of the potatoes. After they were done, I placed them on a paper towel lined paper plate to cool a little bit.

Those Skins Came Off Really Easy

The skins came off so easily, seriously, I couldn’t believe how easy and quick those skins came off.

Time To Mix

Once the peels were off, I placed the potatoes in a bowl and added the butter. I probably should have made this in my Kitchen Aid mixer, but my handheld mixer worked pretty good, just a little messy.

Adding The Rest Of The Ingredients

After the butter was all mixed in, I add all of the other ingredients. I decided to use regular milk instead of evaporated milk like you do with a pumpkin pie. It seemed ok, and to tell you the truth, it’s all I had, haha.

Having The Right Tools Is Important

Again, I should have used the KitchenAid mixer, this was a bit messy. Be sure to keep mixing until it’s completely smooth, this is very important so you don’t have chunks in your pie.

Glass Pie Pans Work Too

Who knew that the only pie pan I had was what seemed like a very tiny glass pie pan. But it worked, great in fact. My easy sweet potato pie recipe was going to happen, and I was starting to get excited.

Measure Twice

One quick tip, as you are placing the pie crust in the pan, be sure it is even on all sides, this will help when you are forming the outer crust. To form the outer crust, just take your thumb and middle finger and press and pinch the crust. Do this around the whole outside of the pie.

That Yummy Filling

Time to put the filling in the pie, yummy. I had to keep reminding myself that there were raw eggs in the mix, it smelled so good I wanted to gobble it all up.

Use A Cookie Sheet

Always place a pie your about to bake on a cookie sheet. Sometimes the mixture can run over, and I don’t know about you, but I hate cleaning my oven.

 

Let It Cool

After baking about 60 minutes, I had to add 1o minutes because it just wasn’t done enough yet, I took it out of the oven. It cooled for about an hour, and stayed fluffy and quite beautiful.

Trust me, if you like sweet potatoes, you will love this recipe. One tip, if you don’t want to put real sugar in the pie, Splenda and Stevia work great with this pie. You could even use a gluten free crust if you need to.
